History
HACCP was developed in the late 1950s by a team
of food scientists and engineers from The
Pillsbury Company, the Natick Research
Laboratories, and the National Aeronautics and
Space Administration. The team developed a system
designed to build quality into the product to
ensure food safety for the manned space program.

What is HACCP?
HACCP (Hazard Analysis Critical Control Point) is
an internationally accepted technique for
preventing microbiological, chemical and physical
contamination along the food supply chain. The
HACCP technique does this by identifying the
risks, establishing critical control points,
setting critical limits, and ensuring control
measures are validated, verified and monitored
before implementation.

Introduction
Hazard analysis and critical control points, or
HACCP citation needed, is a systematic
preventive approach to food safety from
biological, chemical, physical hazards and more
recently radiological hazards in production
processes that can cause the finished product to
be unsafe and designs measures to reduce these
risks to a safe level. In this manner, HACCP
attempts to avoid hazards rather than attempting
to inspect finished products for the effects of
those hazards.
