  • Prices are not that high but owners have stated
perception is they are pricey (because of the
    name)

7
Operating Schedule
  • Stephen goes in at 10pm, does all the baking
himself, and returns home at noon or 2pm the next
    day.
  • Linda goes in when the store opens and comes home
in the evening after cleaning the store and the
    books and orders are completed.
  • No other employees

Sucree Salee Open 7 am to 2 pm Every Day (Peak
Season)

Determining Production Volume
  • Stephen determines the product mix in his head.
  • Estimates the night before what to make
  • Volume data is the quantity of dough as he knows
how much it takes to make a certain number of
    croissants, broche, etc.
  • He evaluates his effectiveness by the number of
items left over at the end of the day.
  • New specials are added daily as Stephan is
inspired by vintage cookbooks and by response
    from enthusiastic customers.
  • If fewer than 30 items then it was a great
    estimate
  • If between 30 and 39 items it was a good estimate
  • If more than that it was a poor estimate

Sales volumes
  • Busiest in the winter--January to April are peak
    months 60 of business
  • Generally busier on the weekends
  • Tuesdays and Wednesdays are the slowest days
  • About 75 of business is non-locals
  • About 80 of business is breakfast
  • Excess product is donated to local food banks,
    hotels or local businesses

12
Say Cheese!
  • Recently added fine European cheeses to the deli
    case
  • Cheese arrives in two forms
  • Whole wheel or block
  • Must be cut and divided by Stephen
  • Wrapped for individual sale
  • Pre-packaged individual servings
  • Seems to be popular and is a revenue builder for
    the bakery

13
Two popular products
  • At the request of locals they have added two
    items to their menu
  • Coffee cake
  • Key Lime Pie
  • Stephen created original recipes from versions he
    found on the Internet
  • Both items are easy to make
  • Both items are very profitable
  • Both items are selling very, very well
  • Stephen now finds them boring

14
New products are helping!
  • Cheese is a good complement to their fine breads
    and popular coffee
  • The cheeses also require a minimum of effort
  • The key lime pie is a local staple as Linda
pointed out, You cannot own a bakery in Florida
and NOT sell Key Lime pie.
  • Coffee cake is the best in the area and may
surpass croissants as the food of choice when
taken with a cup of coffee

15
RM Recommendations
  • Increase prices during peak season
  • By increasing prices during the peak season
(Jan-May), when the bakery makes approximately
60 of their revenues, Sucrée Salée, can increase
their revenues by at least 10.
  • Implement advertising strategy
  • Brochures
  • Offer discounts
  • Brochures could include a coupon for a free cup
of coffee with purchase or a buy/get free
    promotion.

16
Increase Prices
17
Increase Prices
18
Challenges
  • Production time is limited
  • Hesitant to try new business ideas
  • Locating high quality natural ingredients
  • Attracting regular local customers
