Eggless Stroopwafels Recipe
What are Stroopwafels? A stroopwafel is a slim,
round waffle cookie made from two layers of
sweet baked dough held together by caramel
filling. First made in the city of Gouda, South
Holland, Netherlands, stroopwafels are a widely
known Dutch treat popular throughout the
Netherlands and the former Dutch Empire, and
exported abroad. A stroopwafel's wafer layers are
made from a stiff dough of flour, butter, brown
sugar, yeast, and milk that has been pressed in a
hot waffle iron till crisped. While still warm,
the waffles have their edges removed with a
cookie cutter, which enables the remaining disc
to be easily separated into top and bottom
wafers. A caramel filling made from syrup, brown
sugar, butter, and cinnamonalso hotis spread
between the wafers before the waffle

  • is reassembled. The caramel sets as it cools,
    thus binding the waffle halves together.

  • Ingredients -
  • 4 cups all-purpose flour
  • 1 ? cups butter, melted
  • 3/4 cup white sugar
  • 2 (7 gram) envelopes of active dry yeast
  • 1/4 cup warm milk
  • 1 ½ cups molasses
  • 1? cup packed brown sugar
  • 1/3 cup butter
  • 1 tsp ground cinnamon

Directions Step 1 In a large bowl, mix together
the flour, melted butter, sugar, yeast, and
milk. When the dough gets too stiff to stir, turn
out onto a floured surface and knead by hand for
a few minutes. Put aside to rise for 45
minutes. Step 2 To prepare the filling, heat the
molasses, brown sugar, remaining butter, and
cinnamon in a saucepan over medium heat. Stir to
blend, and put aside.
Step 3 Preheat the pizzelle iron. Knead the dough
briefly, and divide the dough into 2-inch balls,
or a size that matches your pizzelle iron
pattern. Press the balls in the preheated iron,
and cook till the iron stops releasing steam, or
until the waffles are golden brown.

Step 4 Carefully remove with a knife or spatula,
and split in half horizontally (like pocket
bread) while they are still hot. Do not wait too
long, or else they will break. Spread filling on
the insides, and place the halves back together.
