DIABETIC PATIENTS Initially, everyone was
skeptical regarding the safety and use of Stevia
especially in cooking. It also got a nod from
the Indian food regulatory watchdog FSSAI in the
year 2015. Today, we have jot down a few tips on
sugar free dishes for diabetic patients.
3Recipe 1 Chocolate Brownie Cupcake
INGREDIENTS 1 ½ Cup of all-purpose flour, 1 Cup
milk (whole milk), 2 Eggs, A Pinch of salt 1 ½
tsp Baking powder or baking soda, ½ tsp Stevia, ½
cup Butter (unsalted and melted) 1/ 2 cup cocoa
powder (unsweetened), ½ cup dark chocolate chips,
2 tsp vanilla essence
4DIRECTIONS
The first step is to preheat the oven to 350
degrees Fahrenheit. Next, nicely grease a mini
muffin tin with oil. Take a medium-sized bowl
and add flour, salt, unsweetened cocoa powder, a
pinch of baking soda, and baking powder. Also,
add a few chocolate chips. Take another bowl and
beat eggs in it. Add vanilla and the sugar
substitute-stevia. Then slowly pour melted
butter. Blend everything nicely. Once done, add
the dry mixture to this mixture. Make sure there
are no lumps left. Pour the batter made into the
tinned cups and bake. After baking it for 12
minutes in the oven, remove and cool at room
temperature for 30 minutes. If you want to ice
them then cool them in the refrigerator.
5ICING
Heat the chocolate chips in the microwave bowl
for 30 seconds and stir continuously. Keep
heating until it is completely melted and
becomes smooth (dont overheat). Add half a
teaspoon of cocoa powder to it. Then add stevia
and vanilla to the chocolate mixture. Pour milk
into the mixture until you reach the desired
consistency. Drizzle on the brownie cupcake
slowly and enjoy the treat!
6Recipe 2 Super Quick Refreshing Watermelon
Smoothie
INGREDIENTS ½ Watermelon (deseeded) 1/2
Cucumber 2tbsp Cubes of ice ½ tsp Stevia sweetener
7DIRECTIONS
Cut the watermelon into cubes. Chop the cucumber
in half. Put the watermelon and the cucumber in
the mixer grinder.
Add 2tbsp of curd into it. Also, add a few ice
cubes and Stevia natural sweetener. Mix it well
in the grinder until smooth. Thats it. Serve
chill.
8Recipe 3 Eggless Ovenless Mix Fruit Pastry
INGREDIENTS 4 Slices of brown bread 1 Cup
yogurt 2 Tbsp milk powder 2 Tbsp cream 2 Tbsp
Stevia 1 Watermelon 10 Grapes (Red, black, or
green as per your choice) 6 Red cherries Dry
nuts (4 pistachios and almonds)

Cut the watermelon into cubes. Chop the cucumber
in half. Put the watermelon and the cucumber in
the mixer grinder.
Add 2tbsp of curd into it. Also, add a few ice
cubes and Stevia natural sweetener. Mix it well
in the grinder until smooth. Thats it. Serve
chill.
10Recipe 4 Baking Powder Biscuits
INGREDIENTS 2 cups all purpose flour 4 teaspoons
of baking powder ½ teaspoon salt 1/3 cup
shortening ½ tsp Stevia 2/3 cup low fat milk
Melted butter
11DIRECTIONS
Take a bowl and add flour, baking powder, salt,
Stevia, and shortening. Beat the mixture for
about one minute. Scrape from the bowl once it
is nicely mixed. Next add milk and mix till the
dough starts clinging to the mixture.
Take out the dough onto a smooth surface and
knead it for 20 seconds. Make sure it becomes
smooth. Pat and then roll it to ½ inch
thickness. Cut the perfect shape one after
another with a biscuit cutter. Place the
biscuits you have cut on a baking sheet. Dont
forget to grease it with melted butter. Bake them
at 450 degree Fahrenheit for 15 minutes. Let
them cool at room temperature and then serve
them.
