Grains are considered in the category of cereals,
or technically grasses, which is the basis of
many of the staple foods grown across the world.
Certain examples of cereal grains are like wheat,
rye, triticale, millet, barley, buckwheat, corn
and oats. To comprehend what whole grains really
are, and why theyre beneficial for you, take a
close look at the wheat plant from where grains
are produced. Today, roller flour mill plant is
in the wide use for grinding wheat.

The particular part of the wheat plant that we
eat is known as kernel or seed that. And this
part planted or allowed to develop naturally on
the field, then it would grow into a new baby
wheat plant. This kernel part contains all the
nutrition present that the baby plant need to
exist until it could carry out the process of
photosynthesis on its own. Once the seed develops
a root system and some set of leaves, then plant
will start to obtain its nutrition from the
environment. Wheat kernels, and seeds commonly,
comprised of three major parts, the endosperm,
germ and the bran.
5
The bran is a kind of envelope or protective
cover for the entire structure of the seed. Bran
is made up of fiber, fat and some proteins. Apart
from this, the germ is a small portion present in
the central part of the seed where the parts of
the plant will develop from. Germ primarily
comprised of proteins and fats. The endosperm is
the major portion of the kernel and it comprised
mostly of starches or carbohydrates as a food
source for the developing plant.
6
When we eat wheat kernels as a source of
nutrition all parts of the seed are important,
just as all the nutrients present in the seed is
significant for a growing baby plant.
7
Unfortunately, what modern society most rely on
the use of only one part of the seed. In the old
times, people used to have stone ground flour
until the machine processing came along. Grinding
the grain between two large stones in the
revolving motion, as this the only procedure at
the old grist mill, produced a whole grain flour.
Modern milling techniques have something
different than the traditional one. They use
giant rollers to crack open the wheat kernels.
The bran and germ are separated from the
endosperm with sieves, or metallic screens having
tiny holes.
8
The endosperm then finely ground with some sets
of heavy rollers to produce a fine grained flour.
This kind of action of the rollers produces some
heat which would degrade some fat content
contained in the wheat germ and wheat bran.
Today, many Atta chakki machine manufacturer are
operating in the market, so you can buy from them
to set a plant of yourself. Nutritionally
speaking, whole grain flour is always considered
better than refined flour because it contains the
wheat germ and the wheat bran and many essential
nutrients.
