    diabetic eating. Maintaining the right balance of
    carbs and fats and proteins can lead to a longer
    life. Diabetics should have about half a plate of
    vegetables, 1/4 of a plate of lean meat and 1/4 a
    plate of carbs. A small side of a dairy product
    can finish off a balanced meal.

Glazed Green Beans
  • Forget fattening, carb-laden mushroom soup and
    onion rings. For this delicious meal worthy of a
    five-star restaurant, all you need is
  • 1 1/4 pounds green beans, trimmed
  • 1 tbs butter (divided)
  • 1/4 cup fat-free low-sodium chicken broth
  • 6 oz red pearl onions, halved and peeled
  • 3 tbs balsamic vinegar
  • 1 tbs sugar
  • 1/2 tsp salt
  • 1/2 tsp ground pepper

  • Boil the beans in water for three minutes, then
    drain and set them aside.
  •   Heat 1-1/2tsp butter in a nonstick pan and
    saute the onions for until browned, then add the
    broth, vinegar, and sugar, and bring to a boil.
    Let it simmer until it's thick, about three
    minutes.
  • Add the beans, salt, pepper, and remaining butter
    and toss to coat. Cook until thoroughly heated
    (about two minutes).
  • Makes 8 servings.Nutrition 36 carbs, 1.6g fat,
    1.7g protein, 9.8g carbohydrates, 2.8g fiber, 4mg
    cholesterol, 0.9mg iron, 139mg sodium, 34mg
    calcium

Breakfast Casserole
  • Good for any day of the week, this breakfast
    casserole is good any day of the
    week.Ingredients
  • 1 pound ground pork sausage
  • 12 eggs
  • 1 can condensed cream of mushroom soup
  • 1 1/4 cups of milk
  • 1 can tomatoes, drained
  • 1 onion, minced
  • 2 pounds frozen potato rounds
  • 1/2 cup shredded cheese

  • Preheat the oven to 375 degrees and lightly
    grease a 9x13 inch baking dish.Cook the sausage
    until it's browned, then drain it and set it
    aside.Beat the eggs, mushroom soup and milk,
    then add the tomatoes, onion and shredded cheese.
    Pour into the baking dish and add the potato
    rounds.Bake for 45-50 minutes. Sprinkle with
    cheese and return to oven until cheese is melted,
    about 10 minutes.
