A seafood omelet is a hasty tasty breakfast or
brunch item that can be prepared easily and
quickly. The fillings of the seafood omelet that
include crab meat, sliced mushrooms and shredded
Swiss cheese provide it an extra edge over normal
omelet if you want, you can also provide a
garnishing touch with shrimp. It is an ideal

sliced) Crab meat 1 cup (250 ml, chopped) Sour
cream ½ cup (125 ml, fat-free) Eggs 8

  • Take a non-stick skillet and apply some cooking
    spray. Heat it over
    medium-high flame. Now add the chopped green
    onions and mushrooms cook the mixture with
    frequent stirring till the liquid part gets
    evaporated. Reduce the flame to low and stir-in
    sour-cream and crab meat and cook until the
    mixture gets heated, though the sour-cream
    shouldnt boil. Set this aside for now
  • Take an 8 inch non-stick skillet and apply some
    cooking spray on it. Heat it over medium-high
    flame. Now pour-in a quarter of egg mixture and
    cook with gentle pushes with the help of a
    spatula along the edges. As the egg mixture
    begins to set, cook while tilting and rotating
    the skillet so that the uncooked egg flows into
    the vacant spaces and gets cooked.

  • When the egg looks almost set but is still moist,
    sprinkle 2 tablespoons of cheese over the half of
    the omelet. Lower down the flame to medium-low
    and spread 1/3 cup of crab meat mixture prepared
    in step 1 over the cheese. With the help of a
    spatula fold the unfilled half of the omelet over
    the filled half.
  • Cook the omelet for a minute or so and then
    gently slide it onto a plate. If desired, garnish
    it with shrimp.
