Apple Cup Cakes

• Ingredients
• ½ cup /110 g superfine (caster) sugar
• 1 cup / 110g self-rising flour
• 1 stick /110g butter, melted
• 1 apple , peeled and diced
• Confectioners (icing ) sugar, to decorate

Method

• Prep and Cook time 25 min
• Heat the oven to 350 degree F . Grease a 12-hole
  bun tin.
• Whisk the eggs and sugar together in a bowl until
  light and fluffy.
• Gently fold in the flour and butter, followed by
  the apple.
• Pour the mixture into the bun tin and bake for
  8-10 minutes, until golden brown and a skewer
  inserted into one of the cakes comes out clean.
  Leave in the tins for 10 minutes, and then place
  on a wire rack to cool.
• Sift over a little confectioners (icing) sugar
  just before serving.
• Makes 12
