Brief History and Facts
  • Johnny Carinos was established in 1993 in
    Colorado Springs, CO. The corporate headquarters
    are located in Houston, TX.
  • It soon branched out to include several
    franchises across the United States
  • Currently there are 139 stores
  • Fired Up Inc. controls 70 franchised stores and
    approximately 30 of the stores are company owned
  • Johnny Carinos is currently the fastest growing
    franchise in the United States with 490
    restaurants expected to be opened with 21
    franchise partners
  • That is approximately 10-12 restaurants annually

  • LOCATIONS
  • There are two stores now located in Tennessee.
    One in Knoxville and one in Johnson City.
  • These restaurants are owned by Allegro.
  • Allegro has the rights to all Tennessee stores
    east of Nashville.
  • They are planning on opening 15 restaurants in
    the next 6 years.

  • MARKETING STRATEGY
  • Johnny Carinos focuses on two groups of age and
    life-cycle demographics.
  • The first is young couples and families between
    the ages of 25 and 40.
  • The second is retired couples between the age 50
    and 60.
  • Recently Johnny Carinos has started a work place
    program for companies in the surrounding area
    that sends menus and coupons out to 10,000
    employees within a 4-5 mile radius of the
    restaurant with their paychecks.

  • Fired Up Inc. works with Summit Marketing group
    to do all of their branding, and work with the
    Richards Group to do their advertising.
  • Rick Ford is hired to buy the media for Johnny
    Carinos and then sells the ideas to the
    franchisees.
  • Currently in Knoxville, Johnny Carinos has one
    billboard, and a free standing insert appetizer
    card in the Knoxville News Sentinel

  • INVENTORY MANAGEMENT STRATEGY
  • Customers expect from Johnny Carinos fresh food
    everyday.
  • Therefore there are bi-weekly orders done for
    food and daily orders placed for produce.
  • The two main distributors for Johnny Carinos is
    IJ Inc. and TT produce company.
  • Johnny Carinos has a par-level set according to
    product mixes. They rely on the Micros computer
    system to determine what is sold and when it is
    sold.
  • Ex. If there are expected to be 10 homemade
    lasagnas sold on Saturday we have to set the par
    and make 10-12 every time and order the
    appropriate ingredients.

  • INFORMATION SYSTEMS
  • Johnny Carinos coordinates their ordering via
    computer.
  • Inventory for the entire store is done by hand.
  • Each order is placed every Monday and Thursday
    for next day delivery.
  • Produce orders are taken four days a week instead
    of seven days a week to lower transportation
    costs.

  • We only use partial truck loads
  • Each truck is unloaded by hand by Johnny Carinos
    employees
  • Trucks make deliveries every Tuesday morning at
