Food Industry Management - Lecture 4
  • The Management Process
  • Continued

2
A quick revision
3
The Management Process
  • A process is a systematic way of doing things
  • Generally accepted functions or processes of
    management consist are
  • Planning
  • Organising
  • Leading
  • Controlling

4
Organising
  • Allocating work, resources and delegating
authority in order to achieve goals
  • Different goals require different structures
  • e.g. consider producing canned foodstuff vs.
    developing computer software

5
Organising Continued
  • Managers must therefore match an organisations
structure to its goals a process called
    organisational design
  • Key ingredients to organising activities are time
    and relationships
  • Organising produces a structure for relationships
    in an organisation
  • Through these relationships future plans are
    pursued
  • E.G. Coordinating the work of various
departments to get our low-fat high fibre yoghurt
    onto supermarket shelves

6
Organising Continued
  • Part of organising is also acquiring additional
human resources to join the current relationship
    structure staffing

7
Leading
  • Leading an important management process which
    involves directing, influencing and motivating
    fellow employees
  • These qualities are important in the pursuit of
of the desired future that emerges from the
    planning and organising process
  • Leadership also entails creating the desired
environment for employees to achieve their
    aspirations

8
Controlling
  • An important process for managers is to ensure
that the employees of an organisation make the
    necessary contribution towards the organisations
    goals i.e. Controlling
  • Elements of control
  • Establishing standards of performance
  • Measuring current performance
  • Comparing current performance to the established
    standards
  • Taking corrective action if necessary

9
Controlling continued
  • Think of the dilemma we will face if we have
orders for our yoghurt which we promised to fill
and we have the yoghurt ready but the packaging
department has not timeously ordered the
containers for the yoghurt or the containers are
available but the quality is inferior

10
Controlling continued
  • Control helps the manager keep the organisation
    on track.
  • Quality has become an important aspect of control
e.g. The use of an approach like total quality
    management (TQM).
  • TQM focuses managements attention on improving
all processes of work by addressing the
operations and functions in the organisation
  • Once again relationships and time are important
    considerations in control activities
