  • Milk is a delicate protein food. It needs low
    temperatures and short cooking times. When
    microwaving, use a large container to prevent
    boiling over.

To scald Heat just below Boiling point Use low heat cook until bubbles appear
White Sauce- melt fat, stir in flour, gradually
add milk as you cook for short times or over low
