sap or juice. The sap is continuously heated to
evaporate the water. The sap is extracted from
the inflorescence of the palm tree. It is then

slaked lime to prevent fermentation. Continuous
heating ensures that the water has completely
evaporated and only a concentrated solution of
sugar is left behind. This solution is left to
