About The Marshmallows
A marshmallow is a sugar-based confectionery that
in its modern form typically consists of sugar,
water and gelatin whipped to a squishy
consistency, molded into small cylindrical
pieces, and coated with corn starch. Some
marshmallow recipes call for eggs. This is the
modern version of a medicinal confection made
from Althaea officinalis, the marshmallow plant.

Ingredients Required

1 Gelatin 10 Gm
2 Water 40 Gm
3 Corn flour 5 Gm
4 Sugar 125 Gm
5 Glucose 20 Gm
6 Water 50 gm

Method
  • Soak the gelatine in water and melt it on a
    double boiler. Add cornflower mix.
  • Boil sugar, water and glucose together till sugar
    attains the soft ball consistency(118 degree
    Celsius)
  • Add sugar syrup into gelatine mixture and beat
    continuously till the mixture begins to thicken.
  • Put the mixture into a piping bag and pipe it out
    on a cling film dusted with corn flour
  • Once dry cut it into pieces and dust it further
    with corn flour to remove stickiness.
