  • Agriculture is one of the most traditional
    Sicilian activities. It includes the production
    of goods through plant and animal farming.
    Cultivation of crops, vegetables, fruit trees and
    livestock raising are at the foundation of
    Sicilian agriculture.

  • Today agricultural practices include industrial
    agriculture (in large fields mainly wheat
    cultivated) as well as organic farming, which
    excludes chemical pesticide and GMO (Genetic
    Modified Organism).

  • Talking about Caccamos local area, vineyards
  • and olive-groves characterize the landscape
    of this territory. For farmers and peasants, the
    harvesting of these two products is certainly a
    seasonal activity to be performed from late
    summer to early winter.

VINEYARDS
  • Vineyard plantations cover large parts of
    Sicilian land. Wine-making is a very important
    agricultural activity in our land, its origin is
    lost in time. Odysseus, the main character of
    Homers masterpiece, uses grape juice to get

    viniculture is regulated by modern standards.

while Cataratto, Grecanico, Inzolia, Malvasia

  • The fruits of the Olive tree are one of the
    major component of the agriculture and gastronomy

    food and cookery, as well as in medical remedies.

    shape you can use various techniques

    you have to take some clay and give it a specific
    shape just using your hands
  • MODELING WITH A POTTERS WHEEL this technique
    is mainly used for the production of crockery a
    potters wheel

is composed of a kind of turning plate where
you put a piece of clay and, while the potters
wheel is turning, you can model it with your
hands or with some specific tools

  • 4. DRYING PROCESS every object must become
    completely dry, otherwise it can lose its shape.

After the necessary drying period, the object
can be carved and decorated.

  • 5. BAKING after the drying process, the object
    must be baked in some specific kilns.

This process can last many hours and at the
end the objects get their characteristic rusty
red colour.

  • 6. ENAMELLING/DECORATION finally the objects
    are enamelled

and decorated.
Sometimes they need to be baked again after
the decoration phase

  • In Italy many towns are famous for pottery
    production Ascoli Piceno, Bassano del Grappa,
    Capodimonte in the province of Naples, Faenza,
    Orvieto, Sassuolo, and so on.

    Caltagirone near Catania

with its suggestive stairs, S.Stefano di
Camastra,
Sciacca
and Burgio near Agrigento.

  • THE RAISING OF BOVINES, PIGS AND SHEEP
  • Cattle-breeding is certainly one of the most
    important economic resources of Caccamo.
  • Caccamo is situated in a rural area, so it is
    provided with good and large grazing lands, where
    cattle can be bred in free state.
  • In Caccamo people rear mainly bovines, sheep
    and pigs, and that ensures the production of
    nature meats.

  • Pigs-breeding is particularly common and
    their meat is mainly used for the production of
    the renowned sausage, made with minced pig meat,
    salt, pepper and other spices, with which pork
    bowels are stuffed.

  • The raising of bovines (mainly cows) and sheep
    ensures dairy produce (specifically cheese) with
    rigorously traditional methods.

CHEESE PRODUCE
  • Caccamo, just like other small Sicilian
    towns situated in rural or mountains areas, is
    famous for its traditional cheese production
    according to the following phases
  • cows and sheep are milked

  • 2. milk is poured into some
  • specific big pans where it is
  • boiled
  • while it is boiling, some cheese-rennet (a
    natural coagulant) is added to the milk which
    divides into 2 parts a dense part (the tuma
    cheese) which remains at the bottom of the pan
    and a liquid part called whey
  • the whey, once separated from the dense part, can
    be boiled again to make the ricotta cheese
    (ricotta means, literally, cooked or boiled
    again)

  • the dense part is put into some specific wicker
    baskets (nowadays, however, they are very often
    plastic baskets) in order to give it the
    classical cylindrical shape
  • after a period of rest, cheese is ready

SHEARING
  • In Caccamo and in other areas nearby, wool
    production is limited to the first phase sheep
    are sheared and the wool is gathered together,
    pressed, rolled up, tied with a piece of string

  • Then it is sold to some textile factories or
    industries (only few are in Sicily) which
    continue the wool manufacture till they get the
    final product.

  • TRADITIONAL MARKETS
  • Many people, and even entire local
    communities, are still involved in traditional
    jobs and activities related to the markets.

Through images and sounds, Sicilian
traditional markets are also a testimony of oral
tradition which cohabits with the standards of
the modern city.

  • On the seaside villages, the fish wholesale
    system persists it is performed by the sellers
    cries through a public auction.

In inland areas, livestock fairs remind us of
the activities related to farming and
sheep-raising. These are seasonal markets,
generally concentrated in late spring and autumn.
