CRUISE SHIP DOCKS WITH HUNDREDS OF SICK
PASSENGERS
As reported by CNN February 14, 2004
GALVESTON, Texas -- A Carnival Cruise Lines ship
returned from a five-day cruise to Mexico on
Saturday with more than 300 people sick with a
gastrointestinal illness. Carnival officials said
preliminary test show the outbreak might have
been caused by a norovirus. The virus is spread
through contaminated food, contact with infected
people or poor hygiene. It can be prevented by
regular hand-washing.

AFTER SICKENING 160 WFU STUDENTS, NOROVIRUS
OUTBREAK HAS SLUNK AWAY
As reported by the Winston-Salem Journal

April 11, 2004
At first, it was a trickle of students at the
Wake Forest University Student Health
Center. They had common symptoms vomiting,
nausea and occasionally diarrhea or fever, which
got better within a few days. The trickle got
bigger, though, and soon the Forsyth County
Department of Public Health was called in to help
find the cause of an outbreak of gastroenteritis
- or stomach flu - on the Wake Forest campus. It
was not the first time this year that an outbreak
had occurred on a college campus. A total of
about 1,000 students at the University of North
Carolina at Chapel Hill and N.C. State University
were afflicted with a similar illness earlier in
the winter. State officials said that those two
outbreaks, and Wake Forests, which sent about
160 students to bed for a day or two, were all
caused by the Norovirus.

What is Antimicrobial?
According to Webster Inhibits or suppresses
the growth of microorganisms. Types of
Organisms Mold, Mildew, Bacteria, Fungus
5
Applications in Foodservice
Trade Names in Food Service Microban,
Microgard, Agion
Casters Treads are mildew resistant, prevent
discoloration and help prevent fungal growth.
Designed to guard against growth of odor
causing microbes Hand Sinks Storage Shelving
- both wire and polymer
Knife Handles Ice Machines Slicer Handles
Cutting Boards Color coded to prevent
cross contamination Stainless Sheets
Note Stainless Sheets have proven difficult to
work with because once the metal is bent or
welded, the anti-microbial protection is lost.

Different Types of Antimicrobial Protection
Available
  • Organic - Old Technology
  • Cellular in nature
  • Inhibits growth of bacteria, mold and mildew
    that causes odors
  • and stains between cleanings
  • Will lose strength over time
  • Has a chemical string structure that breaks
off. Out gases change the actual structure of
    the string
  • Out-gassing leaves behind cells which degrade
    into dioxins/carcinogens
  • Inorganic - New Technology
  • Combines antimicrobial silver ions with a
    patented delivery system
  • Silver has long been used in medicine as an
    antimicrobial agent
  • Will not wash off or wear off
  • Offers safe and lasting protection for the life
    of the product

Information obtained from Rohm and Haas

Norwalk Virus - What is it?
  • Noroviruses - Group of related single stranded
    RNA
  • (Ribonucleic Acid), nonenveloped viruses that
    cause
  • acute gastroenteritis. Commonly called
    Stomach Flu or Food Poisoning.
  • Norovirus was recently approved as the official
    genus
  • name for the group of viruses provisionally
    described asNorwalk-like viruses.

Information obtained from the Center for Disease
Control website.
8
Why is Norovirus Infection Important to Food
Handlers?
  • People sick with norovirus handle the food and
    drink that we will consume
  • A sick food handler - unintentionally - can
    contaminate food that
  • he/she is handling
  • Those eating contaminated foods can become ill
    causing an outbreak
  • Outbreaks have occurred in restaurants,
    hospitals, schools, nursing
  • homes, summer camp, family diners and cruise
    ships
  • Anyplace where food is prepared or handled by
    other people
  • The CDC has estimated that as many as half of
    all food related
  • outbreaks may be caused by noroviruses.

Information obtained from the Center for Disease
Control website.
9
How is Norovirus Transmitted?
Several modes of transmission have been
documented.
  • Foodborne transmission
  • Person-to-person transmission
  • by contact

Information obtained from the Center for Disease
Control website.
10
What Can be Done to Prevent Norovirus
Gastroenteritis?
Many local and state health departments
require food handlers and preparers not work
until 2 or 3 days after they feel better.
Strict hand washing after using the bathroom and
before handling food items is extremely
important in preventing the spread of this
virus.
Information obtained from the Center for Disease
Control website.

EAGLEgard Wire Shelving
Protected with MICROGARD, an antimicrobial
agent which contains built in protection to
prevent the growth of a broad range of
bacteria, mold and mildew on the surface of
the shelves that cause stains, odors and
degradation. MICROGARD is a second line of
defense. In keeping with good hygiene
practices, clean this product as usual. The
protection will not wash out. MICROGARD
combines inorganic antimicrobial silver ions
with a patented delivery system. Active
ingredient FDA approved. Patented QuadTruss
design makes EAGLE shelving 25 stronger and
provides a retaining ledge for increased
stability and product retention.
Open-wire construction promotes higher
visibility, allows light to pass through the
shelves, permits greater air circulation which
helps reduce moisture and dust build-up, and
increases the effectiveness of
fire-suppression systems.
