Etiquette
Pick up your cup and saucer  together - holding
the saucer in one hand and cup in the other. The
best way to hold a tea cup is to slip your index
finger through the handle, on your middle finger.
Hold the cup lightly, by the handle - your pinky
doesn't have to be extended (Hold the saucer
under your cup while you sip your tea (lest you
should spill or dribble).

Etiquette
  • When stirring your tea, don't make noises by
    clinking the sides of the cup while stirring.
    Gently swish the tea back and forth being careful
    no to touch the sides of your cup if possible.
    Never leave your spoon in the cup and be sure not
    to sip your tea from the spoon either. After
    stirring, place your spoon quietly on the saucer,
    behind the cup, on the right hand side under the
    handle.

History of low tea
Afternoon tea is also called "low tea" as it was
usually taken in a sitting room or in a room
where tables (like a coffee table) were placed
near sofas or chairs. Since this wasn't a meal,
more like a late afternoon snack, finger foods
were often served. Tiny tea sandwiches, scones
and pastries were served with afternoon tea. In
England, the traditional time for tea was four
o'clock or five o'clock and no one stayed after
seven o'clock.

As the tea room became more popular, the grand
Victorian room for teas were changed. Many tea
rooms, especially those in hotels, served tea
from three to five o'clock. Today, however, you
will find many tea houses offering tea times
beginning at mid-morning and throughout all the
day. You will also notice that there are three
basic types of afternoon tea

Recipe for Chocolate Strawberries
  • You need 25 fresh strawberries with stems still
    on
  • 12 ounce package of chocolate chips
  • Put the chocolate chips in medium size bowl
  • Put the bowl in the microwave for about a minute
    taking it out every 10-20 seconds stirring it
    each time.
  • Dip the strawberries in the chocolate.
  • Put the strawberries in the refrigerator for 30
    minutes and wait

Buttermilk Scones
sift the flour, baking powder and salt into a
bowl rub in the butter until the mixture
resembles breadcrumbs add the buttermilk and mix
together with a knife into a soft dough roll
out  dough until 1/2 inch ( 1 cm ) thick on a
floured surface cut into 2 1/2 inch ( 6.5 cm )
rounds with a biscuit cutter or glass place on
to a greased baking tray and brush the scones
with  buttermilk bake in oven at 450 F ( 230 C/
Gas 8 ) for 8-10 minutes until golden brown when
cooled serve with strawberry jam and thick cream,
delicious
8oz ( 225g ) all-purpose ( plain) flour and 4
level teaspoons of baking powder1oz ( 25 g )
caster sugar1/2 tsp salt2oz ( 50 g ) unsalted
cold butter1/4 pint ( 150 ml ) buttermilk

Cucumber Tea Sandwiches
  • 1/2 seedless cucumber, peeled and very thinly
    sliced (about 32 slices) 1/4 cup loosely packed
    fresh mint leaves, rinsed, spun dry, and chopped
    fine 1/4 cup unsalted butter, room temperature
    1/4 cup cream cheese, room temperature 16
    slices best-quality white bread Salt to taste
  • Place cucumber slices between layers of paper
    towels to remove excess moisture. In a small
    bowl, combine mint, butter, and cream cheese
    spread on one side of each slice of bread. Lay
    cucumber slices onto the buttered side of 8
    slices of bread. Sprinkle with salt. Top with the
    remaining slices of bread, buttered side down.
    Carefully cut the crusts from each sandwich with
    a sharp knife. Cut the sandwiches in half
    diagonally and then cut in half again. Yields 8
    whole sandwiches or 16 halves or 32 fourths.
