Immigrants bring new food traditions
  • Immigration from Hispanic countries bring these
    food traditions to the U.S. Mexico, Cuba,
    Colombia, Dominican Republic, and El Salvador are
    among the top ten countries from which immigrants
    arrived in 2006.
  • Similarly, increased immigration from Asia
    contributes to a greater awareness of food
    traditions from that part of the world.

  • Travelers are likely to experiment with authentic
    foods and then bring these food traditions home
    with them buying ingredients, cookbooks, or
    cooking equipment to use at home
  • They are also likely to frequent specialty stores

Experimentation and experience
  • Specialty food shoppers are more likely to be
    adventuresome cooks than shoppers in general.
  • They are always looking for new ingredients to
    use in recipes.
  • They also like to experiment with pre-made foods
    more than half of specialty food consumers
    enhance the flavor of takeout foods by adding
    ingredients or products.
  • The average specialty food consumer cooks a meal
    from scratch about three times a week.

    billion in 2007
  • When foodservice sales are added, total specialty
    food industry sales were 62.9 billion in 2007
  • Sales of specialty food at retail jumped by 19.2
    between 2005 and 2007, whereas sales of all food
    grew by just 5.4
  • Specialty food accounts for 12.5 of all retail
    food sales
