  • What is rice?
  • In Japan, rice is more than just a
    staple. It is also a symbol of prosperity, health
    and well-being. The name "gohan" means meal
    because it is truly the central core of any
    japanese meal and sometimes a meal in itself or
    even eaten as a snack. As a child living in
    Japan, I have very fond memories of rice. For
    picnics we would have these wonderful hand size
    rice balls (plain or filled). We called them
    "nigiri ma-n ma-n" for it has quite a ring to it,
    but I believe the true term is onigiri. We also
    ate rice as a snack after school with hot green
    tea poured over it or "rice seasoning" sprinkled
    on top.
  • I often hear people say "rice has no
    taste", but high quality Japanese rice does have
    taste and a wonderful aroma when cooking!  Most
    people in the US eat long grain rice or instant
    rice which doesn't have any taste. I guess the
    best comparison would be - a good Idaho baked
    potato to a regular baked potato.
  • Fried rice is a delicious
    accompaniment to any meal and a wonderful way to
    use left over meats and "day old rice" rice.  The
    key to good fried rice is fresh vegetables and
    cooled rice!

    medium grain white Japanese calrose rice for best
    flavor.

  • 1.  Cook rice according to package.
  • 2.  In a large skillet, heat a couple of
    teaspoons of oil to keep the egg from sticking to
    the bottom of the pan. Pour the beaten eggs and
    cook like a thin omelet.  Remove from heat, cut
    into 1/2" square pieces.
  • 3.  Using the same pan, add a little more oil and
    heat. Fry the diced carrots and salmon until the
    carrots are slightly tender.
  • 4.  On low heat, add several scoops of cooled
    rice and mix.  Keep adding a scoop of rice and
    mix.
  • 5.  Add the diced green onions and diced "omelet
    style" eggs and mix lightly.
  • 6.  While mixing, slowly add a little soy sauce
    at a time. Add soy sauce until the color of the
    fried rice is a slight golden brown color. 
  • 7.   Fry the rice mixture, add salt and pepper to
    taste.

  • Miso is a rich, salty condiment that
    characterizes the essence of Japanese cooking.
    The Japanese begin their day with a fortifying
    bowl of miso soup and use miso to flavor a
    variety of foods in other meals throughout the
    day. Making miso is a household art in Asian
    countries, comparable to the American practice of
    canning foods. To make miso, soybeans and
    sometimes a grain such as rice, are combined with
    salt and a mold culture, and then aged in cedar
    vats for one to three years. Most miso that is
    made in western countries is produced in a
    similar manner, although "quick" miso also is
    available. This quick miso is generally inferior
    in taste. Miso is actually a group of condiments.
    The addition of different ingredients and
    variations in length of aging produce different
    types of miso that vary greatly in flavor,
    texture, color and aroma. In Japan, different
    types of miso are prepared and evaluated much the
    way Westerners judge fine wines and cheeses.
