History and Nixtamalization
  • Before we learn more about the food, lets first
learn how this cuisine comes into existence.
  • Having roots in Mesoamerican cuisine, Mexican
food has a history from back centuries. By the
time the Maya civilization emerged, all crops
were grown maize, and thus nixtamalization was
discovered. The different cooking methods of
Mesoamerican were used and then were transformed
to create the Mexican food culture.

By boiling corn with a base, such as lime or
sodium hydroxide and soaking it for a long time,
the skins around the corn kernels were removed.
This makes corn easier to digest. The
consequence? Mexicans not only got more
nutrients, but their food also tasted better. The
most common ingredients used in Mexican food are
corns, beans, tomato, avocadoes, chili peppers,
and sweet potato.

Typical ingredients The flavors For Taste

array of luscious dishes to try. But whats the
secret? Obviously, the common ingredients used in

this in the hands of Mexicans. Other dishes in
which corn is used are pozole, tortilla, etc.

Chili peppers
  • After corn, chili peppers are another most used
ingredient. Mexicans eat a lot of hot pepper
green or red. Apart from that, dozens of hot and
mild chili peppers are used those could be
    fresh, dried, or smoked ones.

also uses some sauces that bring taste to the
primary ingredients, but these sauces are
different from the other cuisines. Mexican sauces
are served as dips this includes guacamole made
of avocados and red salsa served with tacos and
    tortilla chips.
