    This recipe is easy to make and the ingredients
    needed include a cup of whole wheat flour, ¼
    teaspoon of salt, a teaspoon of vegetable oil and
    water in tandem with a small broccoli head, a
    large carrot, a teaspoon of vegetable oil, ½
    teaspoon of red chili powder, ¼ teaspoon of cumin
    powder, dried mango powder and mustard seeds each
    and of course, ½ teaspoon of fresh and chopped
    ginger.

You will also need a tablespoon of cilantro or
chopped coriander leaves along with salt for
tasting purposes. You have to wash and peel the
carrot and chop it into pieces. Wash the broccoli
head and chop it into pieces as well. Place them
into your food processor and pulse till they are
shredded finely. Heat a teaspoon of oil and add
cumin and mustard seeds to this.

  • Wait till they crackle and then add chopped
    ginger followed by sautéing for a few seconds
    till the ginger becomes light golden in color.
    Add the carrot and broccoli to the pan and mix
    along with adding red chili powder, dry mango
    powder, cumin powder and salt followed by the
    coriander leaves and mix thoroughly. Take the
    wheat flour, add salt, mix and oil. Add water to
    the mix and knead for forming a soft and smooth
    dough. Let this rest in a covered place for 20
    minutes. Divide into equal parts after 20 minutes.

Take the dough ball and roll into a circle of 1/8
thickness approximately. Put some oil and then
put two tablespoons for filling the center. Seal
the edges to form a shape like a dumpling and
using the rolling pin, roll the dough to a circle
which is around 1/8 inch thick. Place the rolled
paratha onto a hot grille using medium-high heat.
Cook from a single side and then flip it. Put ¼
teaspoon of oil/ghee/butter on the side which is
booked. Flip again and put oil on the other side
too.

  • Press the paratha neatly from both the sides and
    it will steadily have spots in light golden brown
    all over. Repeat these steps with all dough
