THE JOURNEY EVERY OVEN TAKES FROM NAPLES, ITALY
TO OUR RESTAURANTS

  • At Pizza90, making pizza is truly our specialty.
We try to set ourselves apart from other pizza
chains by the amount of time we invest in serving
quality pizzas. This all begins with the ovens
that we choose to cook our pizzas in.
  • Wood-fired ovens make a huge difference in the
overall quality of pizza that the consumer
tastes. While these ovens are not inexpensive,
and may be unrealistic to add to a home, we
believe that they are important for crafting the
best possible pizzas on a daily basis. Wood-fired
ovens are unique, as the temperature is manually
manipulated in order to cook the perfect tasting
pizza. Our cooks know just the temperatures so
that each pizza comes out not too hard, but not
    too soft.

  • If your house and finances do allow for a
wood-fired oven in your house, we highly
recommend them! Not only can you cook yummy
pizzas, but also much more. Wood-fired ovens are
a great alternative to barbequing, as they
provide that smoke-finished flavor to many
dishes. You can also opt for ovens of many
different sizes so that they fit comfortably into
    a space.
  • Wood-fired ovens are also fairly simple to
operate, as you just light a fire inside using a
conventional firelighter and let the inside of
the oven heat up. The food is then placed
directly onto the base of the stove and cooked to
taste from there. For our pizzas, we find that a
wood-fired oven provides the crispiness of the
crust, without drying it out. It is interesting
to also observe the ways that pizzas are made
across the world, as most of them are made in
wood-fired ovens. In the Persian Gulf, wood-fired
ovens are called masonry ovens and in India,
they are called tandoors. While they may be a
little pricier of an initial investment when
compared to a classic oven, wood-fired ovens are
also known to last for many years and to maintain
    quality.

To use a wood-fired oven, it is important to note
that it typically takes about an hour to an hour
and a half to heat up. From there, a fire is lit
inside while keeping the chimney door open so
that gas is able to exit the oven. The heat
spreads throughout the oven using radiation and
the walls of the oven absorb the heat. The oven
will typically be hotter towards the ceiling
compared to on the floors, due to the convection
current. Once the embers are swept to the side,
the door and chimney of the oven can be closed
and the food can be cooked. Typically, the food
is cooked at around eight hundred degrees
Fahrenheit, or four hundred and twenty-five
degrees Celsius. Thin pizzas will usually be
cooked within ninety seconds, due to this high
temperature. Typically, the oven will remain hot
for around six hours, depending on the thickness
of the walls within the oven. An advantage to
this oven is that there is very minimal cleaning,
as most residual foods burn off in the heat. At
Pizza90, we are passionate about our wood-fired
ovens and believe they provide quality taste.
