5The Optimal Diet
- Plant-food based diet that emphasizes largely
unrefined food-as-grown (whole grains, legumes,
fresh fruits and vegetables) - High in unrefined complex carbohydrates
- Low in fat, animal protein, sugar, and salt
- High in fiber, antioxidants and micronutrients
and very low in cholesterol - Low in dairy and meat
