Water Crystals
Water Kefir or Japanese Water Crystals have also
been referred to as Sugary Fungus, Tibicos,
Ginger Beer Plant, California Bees, Water Kefir
Grains, Tibetan Mushroom grains, snow lotus,
water crystals, tibi, Kephir, Paris, Kephir,
kefir fungus, kefir d'aqua,and more. Regardless
if they all are the same or are as unique and
different - they all typical share a similar
recipe and each are healthy and beneficial. They
all are small gelatinous masses of beneficial
bacteria and yeasts. Which yeasts and bacteria
dominate will contribute to supple as well as
dramatic differences. The influence of wild
bacteria and yeasts as well as personal brewing
preferences play an active ongoing role. For most
home brewers what is important is simply taste,
pleasure and a hint of health.

Water Crystal is different than Milk Kefir,
though Milk Kefir Grains may also ferment juices
similar to Water Kefir. 
Water Crystals grains are reusable. Once a batch
of water kefir is finished culturing, simply
remove the water kefir grains and place them in
fresh sugar water, juice, or coconut water.

Milk Kefir Grains
Milk Kefir is considered as the original or
traditional form of Kefir and can be made using
cow or goat milk. To prepare it at home, start by
taking a teaspoon of kefir grains in one cup of
milk. Keep it loosely covered with cheese cloth
in a warm place for 24 hours. The bacteria and
yeast from the grains will ferment the milk and
convert it into Kefir. The Kefir will have a
thicker consistency than milk and will have a
tangy flavor, somewhat like drinkable yogurt. All
you need to do is strain the grains using a
plastic sieve wooden spoon and your cup of
Kefir is ready. You can reuse these milk kefir
grains till they remain healthy, by making Kefir
every 24 hours, or you can put them in a cup of
milk and refrigerate.
